Cross-company trainee project 2021

Strong together – training in cooperation with our partners

Together with the Hotel/Restaurant Peterchens Mondfahrt (Wasserkuppe), the Grillrestaurant Kneshecke and the Caterer Genuss³ we are pulling together to challenge and, above all, promote our trainee chefs during the pandemic as well.

Five trainee chefs from the four establishments met in turn in each of the kitchens in February/March 2021, together with the respective training managers/chefs.

On Friday/Saturday, 5/6 March 2021, we were now allowed to be the hosts, initially at the end of our round robin.

Our head chef Tanita Scheel as well as her deputy Ivan Cosic and our trainer Kevin Hoffmann were on fire to bring the cookers in our hotel kitchen to glow with the five trainees.

Here they chopped, cooked, and sizzled, as befits a good vocational training.

What was on the menu:

• Gazpacho with basil foam
• Green asparagus quiche with herb cream cheese and a colourful salad of wild herbs
• Aubergine piccata in tomato sugo, crudités salad and olive dust
• Wild mushroom cannelloni with fried garlic and mojo verde
• Coconut parfait with chocolate soil, Amarena cherries and mango froth
• Two kinds of chocolates: mango/ coffee

And to make others happy as well, we delivered the food to the night staff of the Sacred Heart Hospital, who, together with numerous colleagues, are bravely holding the fort in this difficult crisis and taking care of everyone’s well-being.

We were happy to host the preliminary conclusion of this exciting and instructive project. Especially in these times, the community makes us strong.

Many thanks to our three great partners who had and have a common goal with us in this cooperation. It was the first, but definitely not the last cooperation of this kind, which gave our entire team a lot of pleasure and, above all, also imparted knowledge.
